How to Grill The Perfect Steak

Grilling the perfect steak does take some thought and precision, but it’s not hard. We’ve put together a few tips around steak selection, preparation, cooking and resting to help you get the best out of our juicy Basalt Hills Steaks.

Provenance is important

If you know where your steak came from, it’s easier to be assured of its quality.

Pasture-raised is Better

Sourcing beef that has been on a predominately grass-fed diet will significantly improve flavour.

Understanding The Cut

The thicker the cut of steak, the longer grilling time required and the juicier the steak.

Ensure Steak is at Room Temperature

Don’t dismiss the importance of this easy step. This actually takes hours and you should leave the meat in the cryovac wrapping whilst bringing to room temperature.

Don’t Forget to Season

Be generous with quality sea salt and cracked pepper. Not only will it add to the flavour, but it will assist in creating a beautiful crust on your steak. Season within minutes of grilling for best results. I also love to add garlic granules for an extra hit of flavour.

Sizzling Temperature

Whatever method of cooking you are using, make sure your plate is HOT! You should have your temperature at 275 degrees celsius or higher. If grilling on the BBQ, don’t forget hotplates lose their heat quickly when the lid is up.

Pay Attention to Grill Time

Every steak is cut to a different thickness so the required grill time will vary. Basically, the thicker the steak, the longer the time to cook. A simple way to achieve a medium-rare steak is to record how long it takes for the first droplets of juice to form on the surface of the steak - flip - and cook for one minute less than the first side took. A little bit of attention here goes a long way.

Now it is Time to Relax

Take your steak off the grill and wrap in foil. This step allows the steak to reabsorb its own juices and ensures it is succulent and tender. A simple rule of thumb is to rest for five minutes longer than it took to cook.

Finally serve and enjoy your delicious Basalt Hills Steak with any retained juices generously poured on, some crunchy potatoes and a cracking salad.
